More Fun with Girl Scout Cookies! A Yummy Recipe for Frozen Banana Bites
Remember our list of 10 creative ways to enjoy your favorite Girl Scout cookies? Well… once we started thinking about it, we couldn’t stop! The ideas have just kept on coming, and we had to get in the kitchen and experiment. In fact, this may be the first time we’ve ever eaten our cookies any way besides straight out of the box! It took some serious willpower, but we did it just for y’all.
We’ve also seen lots of businesses with serious cases of Girl Scout cookie fever, and we’re loving the results! I (Sarah) thoroughly enjoyed this Tagalong-inspired cupcake from Magpies Bakery here in Knoxville, Tennessee. Our local family-owned dairy, Cruze Farm, also offers Girl Scout cookies for a limited time each year as toppings for their delicious soft-serve ice cream. I highly recommend checking out both spots if you ever find yourself in my neck of the woods!
You may remember our friend Ashley, who wrote about her memories of making beef stew and apple pie with her grandparents. Ashley has her own food blog, and her recipe for frozen bananas recently caught our eye. We decided to put our own spin on this cool treat by going bite-sized and adding- what else?- Girl Scout cookies!
This is an easy recipe that would make a refreshing snack or dessert on a warm day (if your cookies last that long). It would also be a great opportunity to put kids to work in the kitchen! Bananas are soft enough for younger ones to practice slicing with a child-safe knife, and dunking things in chocolate is a fun task for all ages (trust us- we speak from experience!).
Ingredients
- 1-2 medium bananas (We got 13 bites out of about 1.5 bananas.)
- 2 tablespoons creamy peanut butter (Feel free to use more if you’re a PB fanatic like us!)
- 3/4 cup semisweet chocolate chips
- 4-5 Girl Scout cookies, crushed (We used Do-Si-Dos and Samoas.)
Let’s Get Cooking!
- Peel the banana and slice it into rounds, about 1/4 inch thick.
- Spread a small amount of peanut butter (about 1/2 teaspoon) on one banana round and place another round on top to make a “sandwich.” Repeat with remaining banana rounds.
- Place the bananas on a plate or baking sheet lined with parchment or wax paper. Freeze until solid (this should take a couple of hours, or you can leave them overnight).
- Place the Girl Scout cookies in a plastic sandwich bag and pound them until you have coarse crumbs. Alternatively, you could pulse the cookies in a food processor until you achieve your desired texture. Pour the crumbs into a small dish.
- Pour chocolate chips into a microwave-safe bowl and heat for 1 minute to melt them, stirring halfway through.
- Remove the bananas from the freezer. Working quickly, dip the bananas so half of each round is covered in chocolate. Roll the chocolate in the cookie crumbs.
- Place the dipped bananas back into the freezer until the chocolate has set.
- Enjoy your delicious bite-sized treats!
Make This Recipe Your Own!
- Crunchier cookies like Do-Si-Dos are easier to crush into crumbs. If you prefer a chewier cookie, like Samoas, it may be easier to chop them into small pieces with a knife rather than trying to pound them.
- If you’re not a fan of peanut butter, try a different spread in between your banana rounds. Nutella, marshmallow fluff, or any other nut butter would work. Dulce de leche would be delicious with a caramel- or toffee-filled cookie.
- Frozen bananas on sticks have been a staple of boardwalks and carnivals for decades. For a more traditional and take on this recipe, slice your bananas in half cross-wise and insert a craft stick in the cut side. Freeze the bananas, submerge them in chocolate, and cover the whole outside in cookie crumbs.
